Ingredients

For 8 servings

  • 3 large Eggplants
  • 1.5 lbs Ground lamb

    Use halal-certified lamb

  • 1 large Onion
  • 4 cloves Garlic
  • 1 cup Tomato sauce
  • 1/2 cup Red wine
  • 1/2 tsp Cinnamon
  • 4 tbsp Butter
  • 1/4 cup Flour
  • 2 cups Milk
  • 2 pieces Egg yolks
  • 1/2 cup Parmesan
  • 1/4 tsp Nutmeg

Instructions

Slice eggplants into 1/2-inch rounds. Salt and let drain for 30 minutes. Pat dry.

Brush eggplant with oil and roast at 400°F for 20 minutes until soft.

Brown lamb with onion and garlic. Add tomato sauce, wine, cinnamon. Simmer 20 minutes.

Make béchamel: Melt butter, whisk in flour, cook 2 minutes. Gradually add milk.

Cook béchamel until thick. Off heat, stir in egg yolks, parmesan, and nutmeg.

In a baking dish, layer: eggplant, meat sauce, eggplant, meat sauce.

Pour béchamel over top. Sprinkle with extra parmesan.

Bake at 350°F for 45 minutes until golden and bubbling. Rest 15 minutes before serving.
