Ingredients

For 6 servings

  • 6 pieces Chicken thighs

    Use halal-certified chicken

  • 2 cups Long grain rice
  • 3 cups Chicken broth
  • 2 large Bell peppers
  • 1 large Onion
  • 4 cloves Garlic
  • 2 tbsp Tomato paste
  • 1/4 tsp Saffron threads
  • 1 tbsp Smoked paprika
  • 1/2 cup Green olives
  • 3 tbsp Olive oil

Instructions

Season chicken with paprika, salt, and pepper. Brown in olive oil and set aside.

Saute diced onion and peppers until softened.

Add garlic and tomato paste. Cook 2 minutes.

Stir in rice and saffron. Toast 1 minute.

Add broth and bring to boil. Nestle chicken into rice.

Cover and simmer 25-30 minutes until rice is tender and chicken is cooked.
