For 4 servings

  • 1 lb Penne pasta
  • 2 medium Zucchini
  • 1 cup Cherry tomatoes
  • 1 bunch Asparagus
  • 1 large Bell pepper
  • 4 cloves Garlic
  • 1/4 cup Olive oil
  • 1/2 cup Parmesan cheese
  • 1/4 cup Fresh basil
  • 1 tbsp Lemon zest

Instructions

Cook pasta according to package. Reserve 1 cup pasta water.

Cut all vegetables into bite-sized pieces.

Saute vegetables in olive oil until crisp-tender, about 5 minutes.

Add garlic and cook 1 minute.

Toss in drained pasta with a splash of pasta water.

Add lemon zest and half the parmesan. Toss well.

Serve with remaining parmesan and fresh basil.
