Ingredients

For 6 servings

  • 3 lbs Beef chuck

    Use halal-certified beef

  • 3 cups Beef broth
  • 1 cup Grape juice
  • 1 lb Pearl onions
  • 8 oz Mushrooms
  • 4 medium Carrots
  • 6 slices Halal turkey bacon

    Use halal turkey bacon

  • 2 tbsp Tomato paste
  • 4 sprigs Fresh thyme
  • 2 pieces Bay leaves

Instructions

Cut beef into 2-inch cubes. Pat dry and season generously.

Cook turkey bacon until crispy. Remove and set aside.

Brown beef in batches in the bacon fat. Set aside.

Saute carrots and pearl onions until golden.

Add tomato paste and cook 2 minutes.

Add broth, grape juice, herbs, and return beef to pot.

Braise at 325°F for 2.5-3 hours until beef is tender.

Add mushrooms in last 30 minutes. Top with reserved bacon.
