Ingredients

For 6 servings

  • 1.5 lbs Lamb shoulder

    Use halal-certified lamb

  • 2 cups Long grain rice
  • 1 lb Carrots
  • 2 large Onions
  • 1 piece Garlic (whole head)
  • 1 tbsp Cumin seeds
  • 1 tsp Coriander seeds
  • 2 tbsp Barberries
  • 1/2 cup Chickpeas (optional)
  • 1/2 cup Vegetable oil
  • 1 tbsp Salt

Instructions

Soak rice for 30 minutes. Julienne carrots into matchsticks.

Heat oil in a kazan (heavy pot) until smoking. Brown lamb on all sides.

Add sliced onions. Cook until golden.

Add carrots, cumin, coriander. Stir and cook 10 minutes.

Add water to cover. Simmer until lamb is tender, about 40 minutes.

Push whole garlic head into center. Add barberries.

Drain rice and spread evenly over meat. Add water to cover rice by 1 inch.

Boil until water is absorbed, then cover and steam on lowest heat for 30 minutes.

Tip: Never stir the rice - it cooks by steam.
