Use halal-certified lamb
Make dough: Mix flour, salt, water. Knead until very smooth. Rest 1 hour.
Roll dough into thin ropes. Coat with oil. Rest 20 minutes.
Stretch and pull noodles by hand to desired thickness.
Boil noodles in salted water for 2-3 minutes. Drain.
Cut lamb and all vegetables into thin strips.
Stir-fry lamb in hot oil. Add onion, garlic, and vegetables.
Add tomatoes, cumin, soy sauce, and 2 cups water. Simmer 15 minutes.
Serve noodles in bowls, ladle stew on top. Garnish with cilantro.
Tip: Can substitute with store-bought thick noodles.
