Make dough: Mix flour, yeast, salt, and warm water. Knead until smooth. Let rise 1 hour.
Cook ground beef with onion, pepper, tomato, and spices until dry.
Divide dough into 4 portions. Roll each into an oval shape.
Place filling down the center of each oval.
Fold and pinch the ends to create a boat shape, leaving center open.
Top with shredded mozzarella. Brush edges with egg wash.
Bake at 475°F (245°C) for 12-15 minutes until golden.
Brush hot pide with melted butter and serve immediately.
