Make dough: Mix flour, salt, and water. Knead until smooth. Rest 30 minutes.
Finely chop onion, tomatoes, pepper, and parsley (food processor works well).
Mix lamb with chopped vegetables, tomato paste, and spices.
Divide dough into 8 balls. Roll each very thin (almost see-through).
Spread a thin layer of meat mixture over each round.
Bake at 500°F (260°C) for 6-8 minutes until edges are crispy.
Top with fresh parsley, mint, and a squeeze of lemon.
