Ingredients

  • 4 medium Italian eggplants
  • 2 large Onions
  • 3 medium Tomatoes
  • 6 cloves Garlic
  • 1/2 cup Fresh parsley
  • 1/2 cup Olive oil
  • 1 tsp Sugar
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tbsp Lemon juice

Instructions

Partially peel eggplants in stripes. Cut a deep slit lengthwise, creating a pocket.

Salt eggplants and let sit 30 minutes. Rinse and pat dry.

Fry eggplants in olive oil until softened. Drain on paper towels.

Slice onions thinly and sauté in remaining oil until soft, about 15 minutes.

Add sliced garlic, diced tomatoes, sugar, and seasonings. Cook 10 minutes.

Stuff each eggplant with the onion-tomato mixture.

Arrange in a baking dish. Add water to cover bottom. Cover and bake at 350°F for 40 minutes.
