Partially peel eggplants in stripes. Cut a deep slit lengthwise, creating a pocket.
Salt eggplants and let sit 30 minutes. Rinse and pat dry.
Fry eggplants in olive oil until softened. Drain on paper towels.
Slice onions thinly and sauté in remaining oil until soft, about 15 minutes.
