Soak rice for 30 minutes. Drain well.
Brown chicken pieces in ghee until golden. Remove and set aside.
Sauté onion until soft. Add tomatoes and tomato paste. Cook for 5 minutes.
Add kabsa spices and dried lime. Cook for 2 minutes until fragrant.
Return chicken to pot. Add broth and bring to boil. Simmer 20 minutes.
Add rice on top of chicken. Do not stir. Cover and cook on low for 20-25 minutes.
Toast almonds and raisins in ghee until golden.
Fluff rice and serve topped with nuts and raisins.
