Soak dried chickpeas overnight for at least 12 hours. Do NOT use canned chickpeas.
Drain chickpeas and add to food processor with herbs, onion, garlic, and spices.
Pulse until mixture is finely ground but not pureed. It should hold together when pressed.
Refrigerate mixture for 1 hour to firm up.
Add baking powder and mix. Form into small patties or balls.
Heat oil to 350°F (175°C). Fry falafel until deep golden brown, about 3-4 minutes.
Drain on paper towels. Serve with tahini, hummus, and fresh salad in pita.
Tip: For lighter falafel, bake at 375°F for 25 minutes, flipping halfway.
