Ingredients

  • 4 pieces Chicken quarters

    Use halal-certified chicken

  • 6 large Onions
  • 4 tbsp Sumac
  • 1/2 cup Olive oil
  • 1 tsp Allspice
  • 1/4 cup Pine nuts
  • 4 pieces Taboon or flatbread
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions

Season chicken with sumac, allspice, salt, pepper, and 2 tbsp olive oil.

Slice onions thinly. Cook in remaining olive oil over medium-low heat for 40 minutes until deeply caramelized.

Add 2 tbsp sumac to onions. Cook 5 more minutes.

Roast chicken at 400°F for 35-40 minutes until cooked through.

Toast pine nuts in a dry pan until golden.

Warm flatbread and spread generously with sumac onions.
