Mix flour, yeast, sugar, and salt. Add 3 tbsp olive oil and warm water.
Knead until smooth and elastic, about 8 minutes.
Cover and let rise until doubled, about 1 hour.
Mix za'atar with remaining olive oil to make a paste.
Divide dough into 6 balls. Roll each into a thin circle.
Spread za'atar mixture evenly over each round.
Bake at 475°F (245°C) for 8-10 minutes until puffed and golden.
Serve warm with labneh, cucumbers, tomatoes, and fresh mint.
