Slice eggplant, salt, and let drain 30 minutes. Pat dry.
Fry eggplant, cauliflower florets, and potato slices until golden.
Brown meat with onion and spices. Add broth and simmer until tender.
Soak rice for 30 minutes. Drain.
Layer in pot: meat at bottom, then potato, eggplant, cauliflower, then rice.
Pour broth over (should cover rice by 1 inch).
Bring to boil, then cover and cook on low for 30 minutes.
Rest 10 minutes. Flip onto large platter. Garnish with toasted pine nuts.
