For 8 servings
Soak akkawi cheese overnight, changing water several times to remove salt.
Make syrup: Boil sugar and water. Add lemon juice. Simmer until slightly thick. Add rose water.
Shred kataifi finely. Mix with melted butter.
Press half the kataifi into a buttered round pan.
Mix shredded akkawi and mozzarella. Spread over kataifi layer.
Top with remaining kataifi. Press firmly.
Bake at 375°F for 30-35 minutes until golden. Flip onto platter.
Pour cold syrup over hot knafeh. Garnish with pistachios.
Tip: Syrup must be cold and knafeh hot for best absorption.
