Nigerian street food - spiced grilled chicken skewers with peanut-based suya spice.
For 6 servings
Blend tomatoes, red peppers, and scotch bonnet until smooth. Set aside.
Heat oil in a heavy pot. Fry chopped onions until golden.
Add tomato paste and fry for 3-4 minutes until darkened.
Pour in blended tomato mixture. Cook for 20-25 minutes until reduced and oil floats on top.
Add thyme, curry powder, bay leaves, and salt. Stir well.
Add washed rice and stir to coat. Pour in chicken stock.
Cover tightly and cook on low heat for 30 minutes without opening.
Fluff and serve with fried plantains and grilled chicken.
Tip: The bottom crust (party rice) is the best part - don't stir!
