Blend tomatoes, peppers, and onion.
Heat palm oil until clear. Add blended tomato mixture and cook for 15 minutes.
Add meat stock and bring to a simmer.
Mix ground egusi with a little water to form a paste. Add to soup in lumps.
Cover and cook for 10 minutes without stirring.
Add chopped spinach, cooked meat, and crayfish. Stir gently.
Simmer for 5 minutes. Serve with pounded yam, fufu, or eba.
