Ingredients

For 6 servings

  • 1.5 cups Ground egusi (melon seeds)
  • 1 lb Beef or goat meat

    Use halal-certified meat

  • 4 cups Spinach or bitter leaf
  • 1/2 cup Palm oil
  • 1 large Onion
  • 3 medium Tomatoes
  • 2 pieces Scotch bonnet pepper
  • 2 tbsp Crayfish (ground)
  • 1/4 lb Stock fish
  • 2 pieces Seasoning cubes
  • 1 tsp Salt

Instructions

Boil meat with onion, stock fish, and seasoning until tender. Reserve stock.

Blend tomatoes, peppers, and onion.

Heat palm oil until clear. Add blended tomato mixture and cook for 15 minutes.

Add meat stock and bring to a simmer.

Mix ground egusi with a little water to form a paste. Add to soup in lumps.

Cover and cook for 10 minutes without stirring.

Add chopped spinach, cooked meat, and crayfish. Stir gently.

Simmer for 5 minutes. Serve with pounded yam, fufu, or eba.

Tip: Don't stir the egusi immediately - let it set first.
