Use halal-certified beef
In a large pot, heat ghee and fry onions until deep brown. Remove half for garnish.
Add ginger-garlic paste and whole spices. Fry for 2 minutes.
Add beef pieces and brown on all sides.
Add nihari masala, chili powder, and salt. Mix well.
Add 8 cups water. Bring to boil, then simmer on very low heat for 5-6 hours.
Mix flour with 1 cup water to make a slurry. Add to pot and stir.
Simmer another 30 minutes until gravy thickens.
Serve with fried onions, ginger, green chilies, cilantro, and naan.
Tip: Traditional nihari is cooked overnight. Use slow cooker on low for 8 hours.
