Ingredients

  • 2 lbs Lamb shoulder

    Use halal-certified lamb

  • 1 cup Yogurt
  • 2 tbsp Kashmiri red chili powder
  • 2 large Onions
  • 2 medium Tomatoes
  • 1 tbsp Ginger paste
  • 1 tbsp Garlic paste
  • 1 tsp Fennel powder
  • 1/2 tsp Dry ginger powder
  • 4 tbsp Ghee
  • 2 pieces Bay leaves
  • 1 tbsp Whole spices (cardamom, cloves, cinnamon)

Instructions

Heat ghee in a heavy pot. Add whole spices and bay leaves, let them sizzle.

Add sliced onions and cook until deep golden brown, about 15 minutes.

Add ginger and garlic paste, cook for 2 minutes.

Add lamb pieces and brown on all sides, about 8-10 minutes.

Add Kashmiri chili powder, fennel, and dry ginger. Stir well for 2 minutes.

Add whisked yogurt gradually, stirring continuously to prevent curdling.

Add tomatoes and 1 cup water. Cover and simmer on low heat for 1-1.5 hours until lamb is tender.

Serve garnished with fresh cilantro and accompanied by steamed rice or naan.
