Fiery Jamaican grilled chicken marinated in aromatic jerk spice blend.

Season chicken with green seasoning and garlic. Marinate 30 minutes.
Heat oil in a heavy pot. Add sugar and let it caramelize (burn).
Carefully add chicken to the burnt sugar. Coat and brown on all sides.
Add vegetables, pigeon peas, and thyme. Stir well.
Add coconut milk and 2 cups water. Bring to boil.
Add washed rice and whole scotch bonnet. Stir once.
Cover tightly, reduce heat to low. Cook 25-30 minutes.
Fluff with fork and serve. Remove scotch bonnet.
