Use halal-certified chicken
Blend scotch bonnets, green onions, garlic, thyme, and all spices into a paste.
Add soy sauce, lime juice, oil, and sugar. Blend until smooth.
Score chicken deeply and coat with jerk marinade.
Marinate for at least 4 hours, preferably overnight.
Grill over medium heat with lid closed for 35-45 minutes.
Turn frequently and move away from direct heat if flaring.
Internal temperature should reach 165°F.
Rest 5 minutes. Serve with rice and peas and festival.
